
Smoke Chops Pineapple Bourbon Pork Belly Bites
There’s nothing quite as decadent as pork belly and this takes it to another level! Using sweet and savory spices, and a slow cook on the smoker, you can create this wonderful appetizer– or call it a meal!

- 3–4 lbs Pork Belly
- 4 TB Your Favorite BBQ Rub (try the Smoke Chops BBQ Rub)
- 1 cup Pineapple Juice (for spritzing)
- 4 TB Butter
- 1/2 cup Crushed Pineapple (use a small can)
- 1/4 cup Brown Sugar
- 4 oz Bourbon
- 1/4 cup Your favorite BBQ Sause (try Smoke Chops Sweet n Spicy Sauce)
Instructions
- Cube the pork belly into 1″x1″ cubes. This works best if the pork belly is fresh from the fridge and firm.
- Season generously with your BBQ rub.
- Smoke the pork belly at 250 for 2.5 hours. Spritz with pineapple juice every 45 minutes or so.
- While the pork is smoking, add your butter, crushed pineapple, brown sugar, bourbon, and 1/4 cup of BBQ sauce to a sauce pan.
- Cook your sauce mixture over medium heat until it begins to thicken.
- Move your pork belly cubes into a cooking pan and cover with your sauce mixture.
- Cook for another 45 minutes or until internal temp reaches 200F.
- Serve as is, or with some additional BBQ sauce on the side for dipping.
