This Double Smoked Ham is a flavorful, juicy centerpiece for any gathering. A spiral-sliced ham is brined and smoked low and slow, then braised with chicken stock for extra tenderness. A sweet and spicy glaze made with dark brown sugar, honey, Dijon mustard, Worcestershire sauce, and warm spices is brushed on before broiling to a caramelized finish. Perfectly smoky and glazed, it’s ready to slice and serve!

    Ingredients

    Units Scale
    • 8 pound Spiral Sliced Ham
    • 1 TB Olive Oil
    • BBQ Rub (try Smoke Chops BBQ Rub or any of your favorites)

    Ham Glaze

    • 1 1/3 C, light brown sugar
    • 6 TB of fruit preserves (use your favorite flavor and for a kick substitute half for Pepper Jelly)
    • 2 oz clover honey
    • 2 oz your fav Bourbon (We use TX Bourbon)

    Instructions

    1. Preheat Smoker to 250 degrees.
    2. Smoke ham by placing the ham, cut side down, in a disposable pan on the grill.
    3. When ham gets to 100 degrees internal (about 90 minutes), start making the glaze by combining all ingredients in a small saucepan and sauté on low until it reduces by 1/4.
    4. When ham gets to 110 degrees internal, baste with your glaze.
    5. Repeat when the ham gets to 120 degrees internal and 130 degrees internal.
    6. When the ham reaches 140 degrees internal, you’re ready to serve and enjoy.
