- Chuck Roast (about 3lbs)
- 2 TB Yellow Mustard
- 1 TB Coarse Salt
- 1 TB Ground Black Pepper
- 1 TB Garlic Powder
- 1/2 cup Smoke Chops Sweet n Spicy BBQ sauce (or the sweet and spicy sauce of your choice)
- 1/4 cup Brown Sugar
Instructions
- Preheat the smoker at 275 degrees F.
- Slather the chuck roast with yellow mustard
- Season on all sides with mixture of salt, pepper, and garlic powder.
- Smoke to internal temperature of 165 degrees F
- Remove and wrap it in butcher paper.
- Continue smoking to an internal temperature of 195 degrees F
- Remove the wrapped roast and rest for 15-20 minutes.
- Cut into 3/4 inch cubes and transfer to a foil baking pan.
- Sprinkle with 1/4 cup brown sugar and drizzle BBQ sauce,
- Place back on the smoker for an additional 1- 2 hours until the sauce bubbles and beef is falling apart tender.
