Follow these easy steps and you’ll end up with caramelized meat candy! The beef becomes melt-in-your-mouth tender, delivering smoky, sweet, and savory burnt ends that rival pricier brisket versions.

    Ingredients

    • Chuck Roast (about 3lbs)
    • 2 TB Yellow Mustard
    • 1 TB Coarse Salt
    • 1 TB Ground Black Pepper
    • 1 TB Garlic Powder
    • 1/2 cup Smoke Chops Sweet n Spicy BBQ sauce (or the sweet and spicy sauce of your choice)
    • 1/4 cup Brown Sugar

    Instructions

    1. Preheat the smoker at 275 degrees F.
    2. Slather the chuck roast with yellow mustard
    3. Season on all sides with mixture of salt, pepper, and garlic powder.
    4. Smoke to internal temperature of 165 degrees F
    5. Remove and wrap it in butcher paper.
    6. Continue smoking to an internal temperature of 195 degrees F
    7. Remove the wrapped roast and rest for 15-20 minutes.
    8. Cut into 3/4 inch cubes and transfer to a foil baking pan.
    9. Sprinkle with 1/4 cup brown sugar and drizzle BBQ sauce,
    10. Place back on the smoker for an additional 1- 2 hours until the sauce bubbles and beef is falling apart tender.
