
Smoke Chops BBQ Baked Beans
These Smoke Chops BBQ Baked Beans are a hearty, flavorful side dish for any BBQ. Diced bacon (or pulled pork) is cooked with onion, red bell pepper, and garlic, then mixed with pork and beans, bourbon, ketchup, molasses, brown sugar, apple cider vinegar, mustard, and Worcestershire sauce. Baked low and slow until thick, this sweet and tangy dish is served hot, making it a perfect complement to grilled meats.

- 5 slices bacon, diced*
- 1 large onion, diced
- 1 large red bell pepper, diced
- 4 large garlic cloves, minced
- 4 (16-ounce) cans pork and beans
- 1 cup bourbon
- 1/4 cup ketchup
- 1/4 cup molasses
- 1/4 cup dark brown sugar
- 1/4 cup apple cider vinegar
- 2 teaspoons yellow mustard
- 2 tablespoons Worcestershire sauce
Instructions
- Preheat the oven to 325 degrees.
- Cook the bacon until it starts to brown. Add the onion, red bell pepper, and garlic. Cook, stirring often, until the onion begins to turn translucent.
- Pour in the four cans of pork and beans, bourbon, ketchup, molasses, brown sugar, vinegar, yellow mustard, and Worcestershire sauce. Stir well to combine.
- Cover and bake for 1 ½ – 2 hours, until the sauce is thickened.
- Remove from the oven and allow it to sit for 10 minutes.
- Serve hot.

*If pulled pork is available, substitute bacon for ½ cup of chopped pork and 2TB butter
